Ingredients
1 and 1/3 cup blanched almond flour
1 and 1/2 tsp baking powder
1 and 1/2 cup shredded mozzarella cheese
2 oz cream cheese
1/4 cup grate Parmesan Cheese
2 large eggs
Instructions
Preheat oven to 350 degrees.
Grease or spray muffin pan with non stick spray or rub down with butter or non stick spray.
In mixing bowl combine the almond flower and the baking powder, mix well and set aside.
Melt the shredded cheese and cream cheese in the microwave until very melted.
Once the cheeses are melted and combined well, add flour and eggs and mix together.
Place grated Parmesian in a bowl big enough to roll balls of dough in.
Grease your hands with butter and knead dough to form a sticky ball. Place it on a cutting board.
Cut the dough into 4 parts. Then cut each quarter section into 6 smaller sections.
Roll the small pieces into tiny balls into the parmesan, coating completely.
Add 3 balls to each muffin cup making a clover.
Bake for about 20 minutes or until golden brown. Remove from oven and let cool slightly before serving.
